Achaya\u2019s hefty but helpful book is a complete resource on the history and development of Indian food up to the year of publication. Many books neglect to address the individual varieties of cuisine found in India, but <em>Indian Food: A Historical Companion<\/em> contains a whole chapter delineating fifteen different regional cuisines. Anand is the executive chef and owner of the restaurant Gaggan Anand, which was named Asia\u2019s number one restaurant in 2015.
