Maybe what you suppose is an \u2018authentic\u2019 bowl of\u00a0ramen from the Chinese store downtown?\u00a0<span ramen means to you or I, depending on where you are in the world, can greatly vary.\u00a0 I know that I grew up with the\u00a0Maruchan\u00a0Ramen packets that would sell for a dollar for a packet of six of the things.\u00a0 I have learned that this world of ramen noodles spreads way beyond aisle 18 of your local grocery.<\/p>\n<p>&nbsp;<\/p>\n<p><b><i>The Process\u00a0<\/i><\/b><b><i>Fails<\/i><\/b><span my recipe, I learned how to make Tokyo\u00a0(Shoyu)\u00a0ramen, but I had to modify it after had a minor mishap making the broth.\u00a0\u00a0I followed making the dish true in terms of the noodles and toppings, but you need to have a strong stomach\u00a0to\u00a0make your broth at home.\u00a0\u00a0<span this recipe, but the first go around\u00a0I wanted\u00a0to have a chicken and pork broth, so instead of prepping just the pork, I also added in some chicken feet.\u00a0 (I also found pork leg instead of pork shoulder, but what else is a girl on a budget supposed to do?)<img decoding=\"async\" loading=\"lazy\" class=\" wp-image-3175 alignright\" that got me.\u00a0 In my infinite wisdom (read: sarcastic) and following my boyfriend\u2019s roommate\u2019s suggestion, I decided to boil said chicken feet to make the broth, while simultaneously cooking the bloody pork leg bone.\u00a0 What immersed out of\u00a0<\/span><\/span><span class=\"TextRun SCXW215640886\" lang=\"EN-US\" xml:lang=\"EN-US\"><span class=\"NormalTextRun SCXW215640886\">the kitchen due to this epic combination of burning flesh is what can only be described as lighting a carcass on fire because well, that\u2019s what we were doing for the name of cooking.\u00a0\u00a0<\/span><\/span><span class=\"TextRun SCXW215640886\" lang=\"EN-US\" xml:lang=\"EN-US\"><span class=\"NormalTextRun SCXW215640886\">According to my boyfriend\u2019s roommate, I needed to\u00a0<\/span><\/span><span class=\"TextRun SCXW215640886\" lang=\"EN-US\" xml:lang=\"EN-US\"><span class=\"NormalTextRun SCXW215640886\"><strong>cut off the claws from the chicken feet<\/strong>\u00a0<\/span><\/span><span class=\"TextRun SCXW215640886\" lang=\"EN-US\" xml:lang=\"EN-US\"><span class=\"NormalTextRun SCXW215640886\">while simultaneously trying not to gag from the dead body smell ensnaring my nostrils.<img decoding=\"async\" loading=\"lazy\" class=\"size-medium wp-image-3176 alignleft\" yes, I cut off those nails.\u00a0<\/b>\u00a0It was awful. If you have ever cut your dog\u2019s nails, you know how you\u00a0have to\u00a0take the clippers and you know, get in there and get it off.\u00a0 I didn\u2019t have clippers.\u00a0 I had to take a chef\u2019s knife, hold hands with a disembodied chicken foot, turn it fifteen different ways,\u00a0<b>and try to cut the damn thing\u2019s entire claw off.\u00a0\u00a0<\/b><b>Cutting the tip of their toe off.\u00a0\u00a0<\/b>And if I was too unfortunate not to hit the exact junction between the claw and the bone, I would have to saw through one or the other.\u00a0\u00a0<span me repeat, dear reader:\u00a0<b>MAKING MEAT BROTH FROM SCRATCH IS NOT FOR THE FAINT OF HEART.\u00a0 OR FOR ANYONE CONSIDERING VEGETARIANISM.\u00a0 THIS PROCESS WILL TIP YOU OVER THE EDGE.\u00a0<\/b><\/p>\n<p>And after cutting their nails, smelling burning skin, and looking at the congealed blood on the pork leg, I promptly decided that I would not be making homemade broth anymore.\u00a0 I had my boyfriend and his roommate march the bones to the dumpster, and we aired out the apartment with Lysol, Febreze, and an air purifier for well over a day.\u00a0<span I decided: I am using\u00a0<\/b><b>beef bouillon cubes\u00a0<\/b><b>I found at the local Asian grocery instead and if anyone was going to mess with me about it, they can go hold hands with a dead, twitching, curling chicken hand.<\/b><\/p>\n<p><b><i>The Specifics<\/i><\/b><span all begins in the same place, whether your noodles are sold in those little Styrofoam cups or made fresh at home: ramen noodles.\u00a0 You can buy these at a typical grocer if you like the little nervous block they give you in the\u00a0Maruchan\u00a0or Top Ramen\u00a0packets but\u00a0select grocers and certainly Asian markets sell ramen noodles like you find spaghetti noodles, straight and in a box.\u00a0\u00a0<span used\u00a0Lanzhou Noodles that I found in my local Asian grocery.\u00a0 These noodles are different than the ones that you find packaged in the\u00a0Maruchan\u00a0as they are more hydrated and alive than typical straight noodles you buy in a box.\u00a0 These noodles come in little bundles in the bag, so you don\u2019t need to put all four or five bundles in the pot (like I accidentally did) unless you are truly planning to feed at least 6 people.<\/p>\n<p>To start this recipe without using\u00a0a homemade broth, I used beef bouillon cubes.\u00a0\u00a0I did not have any type of pork bouillon cubes, so I stayed somewhat in the same flavor family and used a beef broth base.\u00a0 Pictured here are the cubes dissolving in the boiling water.\u00a0 You want to add in a cube for each serving of noodles that you use,\u00a0ultimately\u00a0I ended up using 6.\u00a0<span for the broth, I pulled out my defrosted pork belly.\u00a0 I defrosted this in the fridge a day prior to making the ramen.\u00a0 You need to pan-fry the meat before it goes into your ramen.
