The golden-brown sphere of fried potato is spiced primarily with red and green chili, and is sometimes accompanied by even spicier chutneys or sandwiched between warm bread rolls.<!--more--> Vendors across the west-central Indian state of Maharashtra, where batata vada is most popular, serve up fresh iterations on this favorite snack from market tables, portable carts, and pop-up stalls that dot city roads. A relatively easy dish to cook up at home, batata vada is Indian finger food fried to delicious perfection.<\/p>\n<p>To read more about how street food, and specifially the batata vada, has influenced recent politics in Maharashtra, check out the <a href=\"https:\/\/adhc.lib.ua.edu\/site\/globalfoodways\/home\/indian\/learn-more\/\">&#8220;Learn More&#8221; page<\/a> for Indian cuisine!<\/p>\n<h3>Batata Vada Recipe<\/h3>\n<p><em>Adapted from VegeCravings<\/em><\/p>\n<p>Ingredients (for the filling)<\/p>\n<ul>\n<li>3 medium potatoes (peeled, boiled, and mashed)<\/li>\n<li>7-8 curry leaves<\/li>\n<li>2 green chilies (finely minced)<\/li>\n<li>3 cloves garlic (finely minced)<\/li>\n<li>\u00be inch fresh ginger (peeled and grated)<\/li>\n<li>\u00bd tsp. mustard seeds<\/li>\n<li>\u00bd tsp. red chili powder<\/li>\n<li>\u00bd tsp. ground turmeric<\/li>\n<li>1 tsp. salt<\/li>\n<\/ul>\n<p>Ingredients (for the batter)<\/p>\n<ul>\n<li>1 cup chickpea flour<\/li>\n<li>1 tsp. salt<\/li>\n<li>\u00bd tsp. red chili powder<\/li>\n<li>\u00bd teaspoon turmeric<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Instructions<\/p>\n<ol>\n<li>Add mustard seeds to a pan with heated oil. When seeds pop, add curry leaves, ginger, garlic, and green chilies and saut\u00e9 for 1-2 minutes.<\/li>\n<li>Add turmeric, red chili powder, and salt, and turn the heat to low.<\/li>\n<li>Add the potatoes and mix well, and remove from heat.<\/li>\n<li>In a mixing bowl, combine flour, other salt, red chili powder, and turmeric.
